Decaffeination process

At D’CAF, our focus is to keep the process gentle and use naturally occurring materials as processing aids. We work with one of three proven methods that remove caffeine while protecting flavour and aroma.

Swiss Water (Water Process)
Green beans are soaked in purified water; caffeine diffuses out and is filtered away, then beans are re-balanced in flavor-charged water.

Natural CO₂ Process
Under pressure, food-grade carbon dioxide (CO₂) selectively binds to caffeine and lifts it out without disturbing delicate aromatics.

Sugarcane EA (Ethyl Acetate) Process
Ethyl acetate derived from fermented sugarcane is used with water to dissolve caffeine; beans are then thoroughly washed/steamed, and roasted.

Why it matters
We rely on water, CO₂, or sugarcane-derived ethyl acetate—materials that occur in nature—to decaffeinate gently while maximising flavour.
